To give you an experience of the grains our ancestors ate, we blended spelt, amaranth, rye and oats with a mix of apple, apricot, dates, cashews and seeds. Delicious! Amaranth was cultivated by the Aztecs and banned by the invading Conquistadors. One seed head can weigh 1kg containing millions of seeds, which are a source of protein and are rich in minerals. Rye and oats are mentioned in scriptures as ancient crops. They are a good source of fibre and were a major part of the European diet in medieval times.
Spelt was cultivated widely in Egyptian times. The Romans fed it to their armies and the Greeks accepted it as a gift from the Goddess Demeter. Compared with modern wheat, Spelt has more protein and better nutritional benefits. This isn’t just an organic muesli. It’s part of a movement.
